Why create a food safety program?

Why Is It Important?

Most US food manufacturers and distributors fall under the FDA’s Current Good Manufacturing Practice, Hazard Analysis & Risk-Based Preventive Controls for Human Foods Rule, often abbreviated PCHF. The Rule requires applicable companies to develop and maintain a Food Safety Plan which includes GMPs, a hazard analysis, and preventive controls across process, allergen, sanitation, and supply chain in order to mitigate any identified risk. Companies falling under the PCHF rule are required to use a PCQI, or Preventive Controls Qualified Individual, to:

  1. Oversee development of the Food Safety Plan
  2. Oversee validation of process preventive controls(i.e CCPs)
  3. Perform record reviews and periodic reanalysis of the food safety program

While not mandated, most national and international food manufacturers, retail brands, and food service operators require GFSI certification for raw materials and finished products. Only GFSI-certified operations are eligible to supply major retailers such as Costco, Wal-Mart, and McDonald’s. Beyond the possible business benefits, products produced under certified GFSI operations are of better quality and food safety versus similar products not produced under GFSI controls.
